Szechuan Kelp Noodle Salad

We finally found kelp noodles at a local market today (the Rainbow Coop in San Francisco), so I wasted no time in finding kelp noodle recipes.

I started with this Szechuan Kelp Noodle Salad recipe, leaving out the snap peas and tahini because I couldn’t find them, and adding some almond slivers. I quite liked the result, after the initial shock of chewing on the kelp noodles and┬árealizing┬áthat they are far crunchier than they look. The dressing is like a healthier version of Thai peanut sauce, and is a combo I will probably reuse in future salads.
