Kale Leek Soup

We have a lot of leftover kale stems (“ribs”?) these days, as my brother is on a kale chips kick, and after gnawing on a few, I decided they taste a bit like broccoli stalks. So, I decided to try substituting kale stems for broccoli in this Broccoli Leek Soup. It totally worked! Oh, and as usual with my soups, I also added a bit of coconut milk at the end to make it creamier.

Update: I made this again, but this time I used 1/2 beef broth, and no coconut milk. Something about it was ridiculously tasty - maybe the beef broth.
