I found myself with an excess of cheese, almond flour, and eggs today so I found a recipe that would use all of those - 3-cheese crackers. I only used 2 kinds of cheese (and I don’t actually know what the non-parmesan cheese was, something of cheddar consistency), but that didn’t matter - the result was so ridiculously good. Too good, really. They reminded me of cheese straws, one of my favorite childhood treats, and I ended up gobbling up 5 of them at once. If you’re going to make these, make them right before you see a large group of people so you can share the burden of their deliciousness. Oh, and do a good job of scoring them before you pop them in the oven, as the melted cheese makes them more likely for neighboring crackers to meld together.
